Let there be cake

This is one of my favourite recipes I like to cook and eat! Give it a whirl you will not be disappointed!

Lapwing office staff enjoy my Parsnip Cake too!

Parsnip & Maple Syrup Cakes


175 grams of butter

250 grams of demerara sugar

100 ml maple syrup

3 large eggs

250 grams self raising flour

2 teaspoons of baking powder

2 teaspoons of mixed spice

250 grams of parsnip peeled and grated

1 apple peeled cored and grated

50 grams of pecans

Zest and juice of 1 orange

For the topping

250 grams tub of mascarpone

4 tablespoons of maple syrup


Pre-heat oven to 180C

Grease sandwich tin

Melt butter sugar and maple syrup together in a pan over low heat, whisk eggs into this mixture, stir in flour baking powder and mixed spice followed by parsnip, apple pecans, orange zest and juice, bake for 25-30 minutes until the top spring back when pressed. Before serving mix the topping and serve with the cake
