Following Theo’s last post we have more recipes for you from Theo

Courgette Cake

200ml sunflower oil
4 eggs
4 tablespoons honey
225g plain flour
½ tablespoon baking powder
Pinch of salt
1 tablespoon vanilla extract
175g courgette
1 dash of butter
40g cream cheese
170g icing sugar

  1. Preheat oven to 180c
  2. Whisk oil, eggs and honey until combined.
  3. Stir in flour, baking power, salt, vanilla and grated courgette. Beat well.
  4. Pour into a 9inch cake tin, well greased and bake for one hour.
  5. Cool on wire rack.
  6. For icing, beat cream cheese and butter together
  7. Add icing sugar and vanilla and stir well.
  8. Frost when cooled

Beetroot and Chocolate Cake

50g cocoa powder
175g plain flour
1 and ½ tablespoon baking powder
200g caster sugar
250g cooked beetroot
3 eggs
200ml sunflower oil
100g dark chocolate (finely chopped)
Icing sugar

1. Preheat oven to 160c;
2. Grease and line a 9inch cake tin;
3. Sieve cocoa powder, flour, baking powder and sugar into a large mixing bowl;
4. Drain and halve the beetroot and grate until fine;
5. Add the eggs one at a time then pour in the oil;
6. Blend mixture until light and smooth;
7. Mix in the dark chocolate and pour into cake tin;
8. Cook for around 45 minutes;
9. Cool on wire rack;
10.Dust with icing sugar before serving.
